What is thermised milk?

Thermised milk means raw milk which has been heated below the pasteurization temperature of 72.8 degrees Celsius. The thermization temperature used for all our cheeses (except for the Mild Cheddar of Ile-aux-Grues which is made from pasteurized milk) is 62.7 degrees Celsius. This low heat enhances the chance for some natural microfloras to survive and to play an active role during the ripening process. This technique gives our cheeses their unique taste and characteristics. Another benefit of the thermization is the fact that some pathogens do not resist high temperature, so they are eliminated even before the manufacturing process.
